Cleaning the Wheat
The first step involves separate the impurities from wheat such as metal, sticks, stones and straw; and scours each kernel of wheat. It may use inculding vibrating separator, gravity grading stoner, horizontal rotary sieve, wheat scourer etc six wheat cleaning equipments.
Conditioning the Wheat
For this step, we usually call it tempering. Moisture is added in precise amounts to toughen the bran and mellow the inner endosperm. As a results, the wheat kernel can be separated more easily and equably. The tempered wheat will be stored in bins for 8-24 hours, which depends on the kinds of wheat whether it is soft, medium or hard.

This modern milling process is a gradual reduction of the wheat kernels. It consists of grinding and separating. By using different machines, different results can be obtained. Then graded and separated from the bran by sieves and purifiers. Each size returns to corresponding rollers and the same process is repeated until the desired flour is obtained.
